An easy and flavorful Shakshuka recipe featuring sautéed garlic, red bell pepper, and tomatoes simmered in a spiced tomato sauce, topped with eggs, green onions, and parmesan.
In a pan, sauté minced garlic, chopped red bell pepper, and diced tomatoes with olive oil until softened. Add a spoonful of tomato paste, along with salt, pepper, cumin, oregano, and chili flakes. Let the mixture simmer until it thickens into a nice sauce. Create three small wells in the sauce. Carefully crack an egg into each well. Cover the pan and cook until the egg whites are set and the yolks remain slightly runny. Garnish with chopped green onions and grated parmesan cheese. For a classic touch, you can use crumbled feta and fresh parsley instead.
