25 mins prepServes 4
A traditional Indian dish featuring marinated Royal Mahout Paneer in a rich, aromatic curry base, finished with a flavorful garlic, onion, and green chili tadka. Perfect for Diwali celebrations.
1. For the marinade, mix whipped yogurt, oil, red chilli powder, cumin powder, coriander powder, turmeric, salt, and kasuri methi in a bowl.
2. Add the cubed Royal Mahout Paneer to the marinade, coat it well, and let it rest for 1–2 hours.
3. For the curry base, heat 1 tbsp ghee in a pan. Add cumin seeds and dry red chillies, and let them splutter.
4. Add the finely chopped onion and sauté until it turns golden.
5. Stir in the ginger-garlic paste and cook until it softens.
6. Add the tomato paste and the remaining red chilli, cumin, coriander, and turmeric spices. Add a splash of water and cook until the mixture thickens and oil separates.
7. In a separate pan, fry the marinated paneer in ghee until it's golden.
8. Add the fried paneer to the curry base and mix gently to combine.
9. For the tadka, heat 1 tbsp ghee in a small pan. Add the smashed garlic cloves, cubed onion, slit green chillies, and kasuri methi. Sauté until fragrant and onions are slightly browned.
10. Pour the hot tadka over the curry.
11. Garnish with fresh coriander and cream, then serve hot.
